We don't make whiskey. We find it. We taste barrel after barrel to find the ones worth buying, and every bottle is non-chill filtered, so nothing is stripped out. Releases go to members first, with limited retail and private barrel picks.
How We Work
Every Barrel Chosen by Hand
We don't distill our own whiskey. We buy our whiskey and choose every barrel by hand. We buy some barrels already well aged, and some younger that we age ourselves.
Each release is bottled and labeled by us, either as a single barrel or a small batch. We say what's in each bottle and nothing more.
The Bag
Every Bottle Has Its Own Bag
The number on the bag is the whiskey's age, and its color is the saddlecloth color for that number.
New release
Slow-Proofed to 96
Our first slow-proofed release is 11 years old and bottled at 96 proof. Instead of cutting the whiskey down fast, we bring it to proof gradually.
Not every release is proofed down, but when one is, we do it slowly. Each release is bottled at its own proof, because we choose the one that brings out the best flavor in that whiskey.
